There are a few things...
You can see if the oil use problem was documented with the VIN of your Mazda while it was still under the warranty period. If so you may be able to get your dealership or contact Mazda directly and see about reviewing your problem.
The service as per the service advisory is not that labor intense and may only cast 2-300 dollars?(estimate may vary from state to state depending on labor hourly rate)
Aside for that used cars not purchased from a Mazda dealership and if any warranty has expired or voided for some reason noted and outlined in the warranty auto manufactures are not really obligated to repair unless it falls under a SAFETY RECALL unresolved and should not be frown on because they won't fix it.

Independently you can still get it done for considerably less. Depending on the condition of the head it may be rebuildable? I would recommend contacting a few service shops and get a price to R&R the head which will include having the head sent out to their local shop that does machining and heads and or rebuilds them. They will pressure test the head and completely rebuild it. Then the shop only needs to re-install it. You may even get a nice guarantee to go along with the head and maybe even cover partial labor should something go wrong with it during the warranty period.
However, doing nothing will cause other engine and exhaust parts to become damaged which may add to the cost to fix everything?

KISS - Check the oil!
Y'know, I believe in the KISS approach to auto maintenance--Keep It Simple, Stupid.
That means I drive home from the oil change and immediately check the oil, just to confirm that there's enough showing on the dipstick. I also do that virtually every time I fill up with fuel.
When I checked after my latest oil change, I noticed that the oil was not up to its usual place on the dipstick. So the next day I returned to the garage that did the oil change and asked them to check it. They verified that it was too low. They put the car on the rack and checked the drain plug. It was tight, they said. They apologized, added a quart or so of oil, and we checked the oil level again: right where it should have been. I also checked it when I arrived home--ditto.
I also carry a spare quart of oil in the car so I can add oil if needed.
Old sayings work: better safe than sorry; a stitch in time saves nine, KISS.

Parts from Mazda as well many auto manufactures' have been on back order for almost and in some cases over a year.
Cylinder Heads specifically can be seen out of stock as one example..

Unfortunately, under some regulation and I think laws vehicles under warrnanty for any parts those prs must be listed for the exact VIN and other vehicle information. if even a simple clamp is on back order before it can be used under a warranty service must first be approved. This is actually if you think about it common sense. Should the warranty work fail, and it was found that some parts were used not listed for the VIN the auto manufacture or dealer would have to be responsible for the damages or to re-due the previous warranty service.
National chin body shops are having trouble getting not only body parts but also running gear prs for insurance work that either specifies OEM replacement parts or are only available with the OEM.

Mazda3 2.5 w CD
I have a Japan built 2019 Mazda3 with CD and the head just went. Same issue I see people having. Dealer said 4 models all with 2.5 Cylinder Deactivation are included. They had 4 cars in the shop with the same issue. About 80,000km on the odometer and always dealer serviced and driven well.
They're really good about fixing the problem under warranty and the service from Mazda is great. I was planning to buy it out after the lease, but seeing how Mazda is quiet and not proactive about this common issue hinders my trust in the company. I have a year to decide.

Got ours back today. 17 days at the dealer. Engine cleaned up, shiny new head. Running fine.
Service advisor said even though replacing the oil is part of the procedure, Mazda doesn't pay for a filter. So we paid $10 for a filter. Whatever. The dealer was great about everything along the way.

they said maybe a couple weeks to fix it.
did anything else get damaged on yours?
How long is the new cylinder head warrantied for?
does the new one have the same problems?
what gets replaced with it?
read there are other things wrong and rocker arm, gasket leaks hydraulic lash adjuster problems. do these get replaced too?
Is it safe for dealer to fix this or should I get some engine shop?
Will Mazda pay for engine shop to fix it ?
any problems since you had yours fixed?
did you sell the car?
should i just fix it and sell it ?
sorry for all the questions. have been trying to read alot of forums and reddits on the problem. this car was alot of money for me and don't know if i should just get rid of it.

This is where you take it too far. How exactly is Mazda not standing behind its product? They are fixing the issue - correct? It isn't as if all 2.5l motors had the issue, they knew about it, and kept making engines with the problem. This issue apparently affects a small number of engines. Our '19 GT had 20k miles at turn in and had no problems at the time. The fact Mazda doesn't replace the entire engine (as you suggest) doesn't mean they don't stand behind the product. Myself, I am not sure I would want an entire engine swapped. Lots more things to remove and reinstall and more chances for them to be done incorrectly. The head replacement is relatively simple in comparison.
do they replace everything with a head replacement ?
saw there are rocker arm and hydraulic lash adjuster problems
do these get replaced too?
or do they re-use the valves, rocker arms lash adjusters, etc ?
